Loaf Cake with Fresh Figs and Ham

Ingredients

– 180 g wheat flour

– 1 teaspoon baking powder

– 3 whole eggs

– 8 g mature Manchego cheese

– ½ cup olive oil

– ½ cup milk

– 100 g fresh figs

– 75 g chopped high-quality ham

– Pinch of salt and pepper

1 – Pre-heat the oven to 180 ° C (160 ° C with fan).

2 – Sift together the flour and baking powder.

3 – Separately, beat the eggs and carefully add the oil, milk, salt and the freshly ground pepper.

4 – Slowly add the flour bit by bit, taking care not to form lumps.

5 – Add the grated cheese, figs (previously cut into cubes or thinly sliced) and the diced ham. Mix until you obtain a firm dough.

6 – Bake in a loaf tin for 20-25 minutes. Check with a toothpick (and see if it comes out clean) before removing from the oven. Leave to cool before tasting and enjoy!
